- 1/4 cup mint leaves
- Salt as per taste
- 3 tbsp rava
- 2 tbsp chickpeas flour (besan)
- 1 tsp black pepper powder
- 1/2 tsp turmeric powder
- 1/2 tsp cooking soda
- Oil for shelo fry as per required

- First soak the chickpeas for 8 to 10 hours. Then add water and salt to the chickpeas in a pressure cooker and boil for 5 whistles. (Not too much steaming is just 70% steaming)
- Now remove 1/2 cup chickpeas for hummus from these boiled chickpeas. Now we will make tahini sauce. For this, add white sesame seeds in a pan and dry roast it till it gets a little golden color. Now cool the sesame seeds, add them to the mixer jar, add olive oil, crush them and make a paste.
- Now add boiled chickpeas, salt, roasted cumin powder, lemon juice and water to this paste and crush it.
- Then add olive oil and garlic cloves and take a fine paste. Now our hummus is ready. Freeze it, remove it to a bowl, turn it into a round with a small spoon, add olive oil and cayenne powder and garnish with green coriander leaves
- Now we will make falafel. For this, add 1.5 cups of boiled chickpeas in a mixer jar, add green chillies, garlic cloves, chopped onion, cumin, green coriander leaves and mint leaves and take half a bowl. Pour into a large bowl.

- Now add salt, rava, chickpea flour, black pepper powder, turmeric powder and cooking soda to this mixture and mix well. Prepare this mixture with the same lemon size balls. And put in the fridge for 10 minutes.
- Now add a little oil to the cavity of the appam pan, heat it, add the balls made in it, add a little oil on top and cook till both the sides turn golden. Prepare all the falafel in this way. You can also deep fry this falafel in oil if you wish.
