  16. 1 teaspoon sugar
  17. 1 teaspoon salt
  18. 2 tbsp ghee
  19. 1/4 teaspoon baking powder
  20. as required Warm water
  21. 4-5 tbsp milk
  22. as required Oil

  1. For the Egg Roast. First hard boil the eggs. Remove the shell and give slit on it.
  2. In a pan add oil(generally coconut oil is used, but I have used normal oil) add the sliced onion. Add salt and sugar so that it gets cooked fast and get caramelized also. Keep stirring till it turns pink. Then add the ginger and garlic paste. Saute it. Add the curry leaves and green chiles. Saute it.
  3. Now add turmeric, red chilli powder and Kashmiri red Chile powder. Mix them well. Now add the chopped tomatoes. Let it cook till it gets mushy. Now add garam masala. Salt to taste. And very some water so all the masala gets coated easily. Now add the slit eggs and keep stirring in high flame for 3-4 min. Now put off the flame.
  4. Now for the paratha. Take the maida add sugar, salt and baking powder. Mix well. Now add the ghee again mix it well with the maida now the milk again mix. Now add warm water gradually and make the soft dough. Now add oil and knead it for more 7-10 mins. Grease it with oil and cover it with a wet cloth for 1 hour.
  5. Now take the dough again make it into small ball tuck it round. Keep it again for resting for 15-20 mins. Then using oil roll it into thin sheets. Apply oil on one side and dust some flour. Now roll it like we used to make paper fans. Stretch it then from one side roll it. Rest it.
  6. Now roll it into round shape (apply oil on the surface). Then on the tawa fry it. It should be crispy layers.
