- 100 gm gond
- 100 gm ghee
- 1/4 cup finely chopped almonds
- 1/4 cup finely chopped cashew nuts
- 1 cup packed grated dry coconut
- 250 gm khoya
- 1 tsp cardamom powder
- 1 tsp nutmeg powder
- 1 tbsp ginger powder
- 1 tbsp batrisu
- 150 gm sugar
- 1/2 cup water
Instructions to make to make Gundarpak
- Heat some ghee in a heavy bottom pan. When the ghee is hot add little gond at a time and fry it. Fry all the gond in the same way. When it cools down a bit, crush it with the help of a bowl or a potato masher.
- Now in the same pan, add 1 tbsp ghee and saute almond and cashew nuts until light pink in colour. Now add grated coconut to it and roast it on medium heat until light pink.
- To make sugar syrup, add sugar and water in a pan and let it cook on medium heat. When it reaches two string consistency, turn off the heat. Keep stirring in between. To check if the sugar syrup is ready or not, put one drop in a plate and let it cool down a bit. Tilt the plate a bit. If the drop does not move, the syrup is ready.
- Add the remaining ghee in the pan and add grated khoya to it. Cook on medium heat until light pink in colour and ghee starts separating.
- Now add cashew nuts, almonds, coconut and gond to it and mix everything well. Add cardamom powder, nutmeg powder, ginger powder and batrisu to it and give it a good mix. Now add prepared sugar syrup to it and mix everything well. Turn off the heat and let it cool for 5 minutes.
- Add it to a greased tin or a plate and level it with the help of a spatula or a bowl. After half an hour make cuts into it and let it set for couple of hours. Now it can be stored in an airtight container. You can keep it at room temperature only for couple of days as it has khoya in it. After 2 days, store it in the refrigerator.
- Gundar pak is a healthy sweet which is consumed in the morning during winters. It can be served along with breakfast.
