  4. Ginger Garlic paste
  5. 1 tsp Turmeric powder
  6. Salt

  8. chettinad masala
  9. 3 tsp Coriander seeds
  10. 1 tsp Cumin seeds
  11. 5 Dry red chilli
  12. 1 tsp Fennel seeds
  13. 1 Cinnamon sticks
  14. 4 Cardamom
  15. 4 cloves
  16. 1 tsp Pepper

Steps to make to make Chettinad chicken roast

  1. Add all the spices mentioned above in a pan and roast it. Then add it into a mixer and ground it coarsely
  2. In a kadai, heat oil, add finely chopped onions, curry leaves and green chillies. Saute till it turns to golden brown. Then add ginger garlic paste. Saute till it's raw smell goes.
  3. Add cleaned chicken. Mix it well. Add salt. Close it with lid and turn to low flame. Do not add water as chicken will ooze out it's water. Occasionally open the lid stir it
  4. Once chicken almost done add spicy Chettinad masala prepared and mix it. Once chicken fully cooked, turn flame high, once water disappeared turn off the stove. CHETTINAD chicken roast ready
  5. Serve it with rice
