  1. For Dough
  2. 1 cup Maida
  3. 1 tsp ghee
  4. 1 tsp powdered sugar
  5. as per taste Salt
  6. as required Adequate water to make a soft dough
  7. as required Oil to grease
  8. For Roll
  9. 6 eggs
  10. 1 medium size onion sliced
  11. 1 medium size carrot julienned
  12. 1 green capsicum julienned
  13. 1 medium size beetroot julienned
  14. 2-3 green chillies chopped fine
  15. 1 lime juice
  16. as per taste Salt
  17. as required Oil to fry the Roll

Steps to make to make Egg Roll

  1. In a bowl add Maida, powdered sugar, salt and ghee and mix well. Add adequate water to make a soft dough.
  2. Grease with oil and keep it covered for 10-15 mins
  3. In a bowl add julienned carrots, green capsicum, chopped onions and julienned beetroots, green chillies and lime juice and mix well
  4. Make balls from the dough, roll out and then cut quarter on one side, roll sidewise and tuck in the tail end like a lachha. Make like a standing peda shape. Complete for the rest.
  5. Press the peda like shape. Roll out the Paratha
  6. Beat the eggs and add salt and set aside
  7. In a Tawa first drizzle oil, add the Paratha. On medium flame roast the Paratha, set aside
  8. In the same tawa add beaten egg, place the Paratha. Press and flip, the egg side would be done well and the top side would be fried crispy. Set aside. Complete the batches
  9. On the egg, add the julienned vegetables and fold from one side, place the parchment paper around it well and tuck the beneath.
  10. Plate with veggies as salads, lime wedges, green chilli and enjoy one of the iconic street food of Kolkata
