- 1 cup kabuli chana, soaked in water for 12 hours,
- 3 tbsp oil,
- Pinch hing,
- 1 tsp grated garlic,
- 1 tsp grated ginger,
- 3 green chilli slitted,
- 1 med sized onion chopped finely,
- 1/2 tsp haldi powder,
- 1 tsp red chilli powder,
- 1 tsp Kashmiri red chilli powder,
- 2 tbsp chola masala powder,
- 1 cup fresh tomato puree,
- to taste, Salt
- 1/4 tsp black salt,
- 1 tsp diluted tamarind pulp,
- For chola masala....
- 1 1 med sized tej patta,
- 5 dry red chilli,
- 2 tbsp dhania sabit,
- 1 tsp Jeera,
- 1 tsp . kali mirch sabit,
- 5 laung,
- choti elaichi,
- 1 dalchini pc,
- 1 small pc of javitri,
- as required . Very small quantity of nutmeg,
- 1 tsp ajwain,
- 1/4 tsp methi,
- 1 tsp kasoori methi,
- 2 tbsp anardana,
- 1 tbsp amchur powder,
- For Tadka..
- 2 tsp desi ghee
- 1 tsp red chilli flakes
- as required Tadka is optional,
Steps to make to make Pindi Chole
- Firstly dry roast all the ingredients of chola masala except the last four till roasted smell comes out.
- Turn off the flame add the other 4 ingredients, mix it well. Grind it to a fine powder, keep aside.
- Take a pressure cooker, wash the chole, add in the cooker.
- Now add 1 tea bag, 1 bari elaichi, 5 laung, 1/2 tsp kali mirch sabit, 1 dalchini & 4 choti elaichi in a pc of cloth, make a potli.
- Add this in the cooker, also add 4 cup water & 1 tsp salt. You can add 1/2 tsp baking soda as per your wish.
- Place the lid, give 8 whistles on high flame. Lower the flame, cook it for 10 minutes.
- Turn off the flame, allow it to depressurise naturally.
- Take out in a bowl, keep aside. Do not discard the water in chole.
- Now take an iron wok, add oil, heat it.
- Add hing, stir it. Now add ginger garlic grated, saute it until rawness is released.
- In goes onion & green chilli, saute it until light brown.
- Add in haldi, red chilli powder & Kashmiri red chilli powder, mix it well.
- Mix amchur powder with chola masala, add in the masala, stir it nicely. Add lil water to avoid burning. Stir fry it until oil has oozed out.
- Now add tomato puree & salt, mix it well. Lower the flame, cover it with the lid, cook it until oil has surfaced.
- Open the lid, add black salt & tamarind, mix it well. Add in boiled chole along with water, mix it well.
- Cook it on high flame till dry. Turn off the flame, cover it for 5 minutes.
- Take out in a serving bowl, garnish it with chopped dhania patta.
- Can be had along with Poori, Paratha or Kulcha.
- Tadka is optional....your choice...
- Take a tadka pan, add ghee, heat it. Add red chilli flakes, pour it immediately over the cooked chola.
